Wer aber ein wenig Erfahrung hat und auf der Suche nach neuen Rezepten ist, der wird so wie ich sehr enttäuscht sein. Selber backe ich regelmäßig seit einem halben Jahr. Das Buch ist für Anfänger sehr gut aufgebaut. Auf den ersten 34! Seiten nur Einleitung. Wie wird Sauerteig hergestellt, Zubehör, Mehlsorten usw. Bis Seite 57 Brötchenrezepte. Anschließend kommen dann verschiedene Rezepte Brote, Ciabatta, Toast, Baguette, Stuten usw. Die Beschreibung der Brote und Stuten ist dann teilweise mit Bebilderung und jedem Handgriff auf jeweils 8-10 Seiten beschrieben. Insgesamt sind es 20 Rezepte. Das Buch hat 200 Seiten. Ich will das Buch nicht schlecht machen, aber nichts für Fortgeschrittene. Für Anfänger Topp!!

Wer diese Bücher kauft, kennt im Normalfall auch seinen Blog.Ich besitze inzwischen mehrere Seiner Bücher.Wobei ich aber gestehen muss, das mir das Brotbackbuch NR:1 und NR:2 immer noch am Besten gefallen.Jedoch sieht man an den Büchern auch, das er eine Gewisse Entwicklung mit seinen Büchern gemacht hat.Zum Beispiel gefallen mit in diesem Buch die Erklärungen für die Sauerteigherstellung besser.Alles ist wirklich so geschrieben, das wirklich jeder so ein Brot Backen kann.Daher auch die 5 Sterne.Für mich sind die Rezepte auf dieser ebene leider nichts. Das kommt jedoch daher, das ich bereits die anderen Bücher kenne. Diese sind mehr auf einer sagen wir Fachlichen ebene.Zudem werden die Brötchen und Brote hier etwas. Jedoch merke ich den Unterschied zu den Broten aus den anderen Büchern. Dort gibt es Teilweise auch mehrere Vorteige, die Brote werden jedoch ordentlich geknetet.Das ganze ist da einfach etwas runter.Trotzdem ein tolles Buch, das ich jedem, der Eigenes Brot und Brötchen Backen möchte, die auch nach was schmecken nur empfehlen kann.

 Der Inhalt und die Aufmachung dieses Buches ist hervorragend gelungen:- die Rezepte sind gut und abwechslungsreich ausgewählt und bieten für jeden etwas. Zum Beispiel gibt es ein Ciabatta Rezept mit wenig Hefe und langer Reifung aber auch reine Sauerteigbrote, die etwas mehr Erfahrung brauchen, wie die Schwarze Seele aus Roggenschrot und Roggenvollkornmehl und nur mit Sauerteig.- die Aufmachung ist außergewöhnlich. Es gibt nicht nur zu jedem Rezept eine Ãœbersicht über alle benötigten Zutaten sowie sehr hilfreiche Bilder, sondern auch auf der letzten Seite jedes Rezeptes einen detaillierten Zeitplan vom Start bis zum Backen.Ein konkretes Beispiel aus dem Buch:Ich habe das Rezept des Malzkrustenbrotes als reines Sauerteigbrot und mit Roggenvollkornmehl verdreifacht und drei Brote parallel gebacken.Der Teig wog etwa 3,4 kg. Geknetet habe ich dann in einer Ankarsrum 6230 Küchenmaschine, die diesen schweren Teig spielend schaffte.Zur Veranschaulichung habe ich Fotos sowie ein Video eingestellt.Der Tei

...dann mag man nicht mehr aufhören. Zumindest, wenn man einen guten Guide an seine Seit hat, vor allem in der Anfangszeit.Dieses Buch ist dafür Gold wert. Ohne komplizierte Fachterminologie führt Lutz Geißler hier in die Welt des Brot backens ein, mit Sauerteig oder Hefe. Vieles wird ausführlich erklärt, jedoch ohne langatmig zu werden. Die Illustrationen und Fotos bringen Leben in das Buch, es macht einfach Spaß durchzublättern. Absolut genial finde ich die Größenangaben für Hefe - so braucht man auch für 0,13gr Hefe keine extra Waage im Haus. Neben den ausführlichen Schritt für Schritt-Anweisungen ist jedes Rezept nochmal auf einer Seite zusammengefasst, super wenn man etwas wiederholt backt. Außerdem gibt es zu jedem Rezept Variationen, zum Teil sogar mehrere.Ich backe jetzt seit ein paar Monaten selber Brot, auch mit Sauerteig. Dieses Buch ist genau das, was ich gesucht habe, ein praktisches Handbuch mit einfach guten Rezepten, die meine ganze Familie glücklich machen, sogar den fünfjährigen Sohn!

Ich möchte schon lange Brot backen und kannte den Ploetzblog des Autors schon....Dieser ist ohne Frage ganz hervorragend hat mich aber als Anfänger mit den vielen Infos und dem Fachvokabular teilweise überfordert... mit diesem Buch habe ich einen tollen Einstieg in die Thematik gefunden und konnte erste Erfahrungen sammeln.Alles ist übersichtlich und ansprechend gestaltet und fordert geradezu zum nachbacken auf. Ich habe bereits mehrere Rezepte ausprobiert und tolle Ergebnisse bekommen. Das Baguette wurde schon mehrere Mal gebacken und schmeckt phantastisch...Das Buch gefällt mir sehr gut.
